    Yeah, that happened to me last time.  I made an ugly looking loaf and gave it to my vegan neighbors and they said it was the best they've ever had.  "Do the same thing" next time, they said.

    So I used the same ingredients this time, but I didn't measure anything.  I filled up the bread maker with flour, threw in with fingers salt, yeast.  Ran it in knead mode for a few minutes, then added water until I had a much firmer dough than the no-knead style.  Kneaded it completely in the bread maker. 

    Dumped the dough ball out in a bowl with some olive oil, swooshed it around and put it outside overnight (high 40s, low 50s).

    So I brushed all and scraped all the crap out of the banneton and remembered to dust with rice flour (this was glutenous, don't think it maters tho).

    Let it rise in the banneton, dumped it on some parchment paper trimmed to allow me a couple "wings" to grab and lowered that into the dutch oven.

    Cooked 25 minutes with the lid on, 20 with the lid off and another 5 outside the cast iron while letting the oven ramp up as high as it got...for color.

    It's cooling now, but I can tell it's going to be gud.

    In summary:  I didn't measure anything.  I totally used the breadmaker for all the mixing and kneading.  I used bread flour, normally I'll use unbleached or AP.  i like this combo, will move forward with it.

    Funny how that happens. Mine was the Lahey No Knead recipe, but I think I left it to rise too long and it over proofed and got too sticky. Flavorwise it turned out alright.

    Honestly I'm not sure yet, the whole flour game is new to me. I've always just used King Arthur Bread flour in my home oven with great results, but now that I've got the pizza oven that'll hit much higher temps, I figured I'd start learning more about the topic.  From what I've read, All Trumps is a style of flour from Gold Medal that's used heavily in Pizzerias for NY style pizza. It's got much more protein so holds up better to stretch and has more of that distinct chew. 00 is more for Neapolitan style I think, but again I'm a completely newb on this topic.

    Thanking my lucky stars that I live in the greater Louisville area for once (or more but a different topic) as UPS will be distributing the Pfizer covid vaccine to my side of the country.  FedEx for the left coast and inland to the Mississippi.  Good luck with that-All kidding aside, get juiced up as this virus takes no prisoners and delivers the deadly punch at the highest rate we have ever seen in over 100 years.  Don't debate-get the shot.  
    I will see all of you this Friday PM (9 PM EST) at the virtual watering hole.

    00 is a super fine grind.  Usually when people talk about it here it's in context of pizza flour for a neapolitan style pie.  That flour is high protein and would make a very al dente (firm and chewy) bread that most people would give their jaws a workout eating.

    Usually we don't care about the fineness of the grind, but we do care about the protein.  Protein is mostly gluten and makes the "foam" tough. 

    Pastry flour is low protein, all purpose (AP) is medium, bread is high and the pizza flour we refer to as Caputo or just Tipo 00 is higher yet, and very finely ground.

    Absolutely correct. We have our bread flour specially blended for us to achieve the higher protein levels we need for high speed bread making. We’re running anywhere from 13.5-13.8% protein

    The higher protein flour generally handles higher oven temps better.

    @GrateEggspectations - As you hinted, I don't usually label shipping companies but this was a low-key jab at getting the message out there.  
    Not sure about a new approach although today is a self-created reason to celebrate as will be tomorrow.  No, this is not a daily trend, just that Weds and Thurs have significant meaning of late.

    That looks great @YukonRon. The meat is sliced thin, even cheese distribution which did not separate when melted all on a softer roll with a crust with a little tug.

    I am David Wilson Head of Inspection Unit United Nations Inspection Agency in Hartsfield-Jackson International Airport Atlanta, Georgia. During our investigation, I discovered an abandoned shipment through a Diplomat from United Kingdom which was transferred from JF Kennedy Airport. To our facility here in Atlanta, and when scanned it revealed an undisclosed sum of money in 2 Metal Trunk Boxes weighing approximately 110kg each. The consignment was abandoned because the Content was not properly declared by the consignee as money rather it was declared as personal Effect/classified document to either avoid diversion by the Shipping Agent or confiscation by the relevant authorities.

    The diplomat's inability to pay for Non Inspection fees among other things are the reason why the consignment is delayed and abandoned. By my assessment, each of the boxes contains about $4M or more. They are still left in the airport storage facility till today. The Consignments like I said are two metal trunk boxes weighing about 110kg each (Internal dimension: W61 x H156 x D73 (cm) effective Capacity: 680 L) Approximately. The details of the consignment including your name and email on the official document from United Nations' office in London where the shipment was tagged as personal effects/classified document is still available with us. As it stands now, you have to reconfirm your Full name, Phone Number, full address so I can cross-check and see if it corresponds with the one on the official documents.

    It is now left to you to decide if you still need the consignment or allow us repatriate it back to UK (place of origin) as we were instructed. Like I did say again, the shipper abandoned it and ran away most importantly because he gave a false declaration, he could not pay for the yellow tag, he could not secure a valid non inspection document(s), etc. I am ready to assist you in any way I can for you to get back this packages provided you will also give me something out of it (financial gratification). You can either come in person, or you engage the services of a secure shipping/delivery Company/agent that will provide the necessary security. That is required to deliver the package to your doorstep or the destination of your choice. I need all the guarantee that I can get from you before I can get involved in this project.     Been messing around with some enterprise functionality in Oracle Enterprise in a massive data warehouse.  Specifically, this "parallel" DML mode and the DDL hints are nice, you can even specify the number of processors you want to allocate to a job.

    Anyway, this system is super powerful, slated for production. Old production warehouse is a comparative dog.  I did some stuff that would have taken hours and paralyzed a system that ran in minutes.

    Been messing around with some enterprise functionality in Oracle Enterprise in a massive data warehouse.  Specifically, this "parallel" DML mode and the DDL hints are nice, you can even specify the number of processors you want to allocate to a job.

    Anyway, this system is super powerful, slated for production. Old production warehouse is a comparative dog.  I did some stuff that would have taken hours and paralyzed a system that ran in minutes.


    I know their flagship product is their database, but if an IT Exec ever floats the idea of migrating your org to Oracle ERP Cloud, just save yourself the headache and shoot them in the **** head.

    Congrats @CPFC1905.  I've been just as surprised that some law firm was willing to take my daughter off my payroll.  We're still in the transition - sorting out health care, car insurance, etc. but we're getting there.

    Love the weekend football notes.  As a Man U fan I can only hope that their miserable failing in the Champions League translates into more focus/time/energy devoted to the league - but I realize I'm probably kidding myself - and I'd be really surprised if it plays out this weekend.

    After some of their recent performances I became convinced that while Ole didn't learn everything from Sir Alex, he seemed to have inherited the ability to give an effective blow dryer talk at halftime.
