    The funny thing is that there were no Kings Hawaiian buns. None. Slider, full size, nada.

    It's like folks hit the HEB and beelined for the TP then the King's Hawaiian buns.

     Stupendous! I can almost taste the halibut masala. 
    It was fantastic! It’s basically Madhur Jaffrey grilled salmon masala but a little different :)

    Damn, i don't know how I missed this thread.  Too busy trolling stuff that was sunk three pages pack I guess.

    Some fantastic looking cooks, I must say.  I mean about the food, the actual cooks, not so fantastic looking.

    This might be heresy, but with short ribs, I'm looking for the most un-prime cut I can find.  Like from an emaciated cow.  I did some chili from the last batch I cooked and it was at least 40% fat - they were prime. I want to SV some lean short ribs, smoke the bejesus out of them and enjoy some less than 20% fat ribs that look like their medium or MR.  Help me jesus. 
    Careful Nola.  I’ve heard you can catch heart disease from emaciated cows.

    @botch - it was shredded chicken, black beans, corn, rotel with some tomato sauce and a bunch of spices mixed in till it had a taste I liked.  I laid down a tortilla then the chicken sauce mix then cheese. Repeated till at the top of the pan.  Don’t know if Mexican Torta is a thing or not but it reminded me of a veggie Torta I did before.

    I did a sous vide 1/2 brisket flat and a slab of babybacks - I liked the brisket bath temp 155 for 24hrs. Got slices with an electric knife but it didn’t pass the finger test, laid a slice over my finger and it broke :-) still tasted good think I’ll do 18hrs next time

    @nolaegghead I’ve smoked Wagyu short ribs and choice grade short ribs. I very much prefer the choice grade for the reasons you state.

    Supermarket today had NO fresh garlic.
    I'm scared, now.   :o 
     
    EDIT:  Oh, but they do now carry SRF!  Bought a Wagyu steak for about $27; I've never had one before.

    Garlic was in short supply a couple of weeks ago but once all figured out this was not a vampire apocalypse there have been no shortages. 
    Now for some serious supply chain hic-cups; For better than a week and independent stops at two Kroger stores that always carried 'em, no habaneros.  You f'ing me...A week ago Monday there were plenty by the end of the week and now today (Weds) nothing. 
    I have a few days rations of the habanero/garlic roasted salsa but things could get interesting soon.  Never saw it coming as it is the anti-TP salsa.   B)
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
