Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I made a batch..(am a diabetic). Lasted me about two weeks. Soft, chewy, delicious. Wonderful cookies.

Gave these a try, came out great! They were gone far too fast. It made a lot, so I gave some to the neighbors too.

@JohnInCarolina - I made Ginger-Molasses cookies for two family Christmas gatherings - one in the morning and one in the evening so it was a busy Christmas Eve for my house. The cookies were a hit at both places.
After my egging neighbors returned from spending Christmas with their son's family in Kentucky, I was gifted a jar of Spring Valley Farms 100% Pure Sorghum from Caneyville, Ky for taking care of their pool for a week while they were away.
I made Ginger-Molasses cookies for neighbors last year and they got rave reviews. But this year I decided to gift five neighbors New Year's Day Cookies using the same Ginger-Molasses recipe but with the Sorghum instead of Molasses, no other changes.
The new version was appreciated even more this year. Comments ranged from "They are Amazing", "I like the flavor better", "Didn't know sorghum would taste that good baked", to "Dang Good Cookies".
Now I am thinking of making a favorite Pennsylvania Dutch Shoo-Fly Pie using Sorghum:Shoo Fly Pie
1 1/2 Cup Flour
1 Cup Brown Sugar Packed
1/4 cup Spry (Spry is the PA Dutch term) for, Shortening, aka Crisco
3/4 Cup Molasses Brer’ Rabbit Dark
3/4 Cup Hot water
1/2 Teaspoon Baking Soda
Make Crumbs by combining the flour, sugar, and spry.
In a bowl dissolve Baking soda in the hot water.
Pour in Molasses and stir.
Pour mixture of water, baking soda, and molasses into a 9” unbaked pie shell.
Top with the crumbs.
Bake in oven at 350 degrees Fahrenheit for 30 minutes.
Ubi panis, ibi patria.
