I never had the pleasure of meeting the man face to face, but via some personal emails we had chatted.
In celerbrating his memory today I started 4 pounds of Ree's Burgundy Mushrooms and at this point I'm only 5 hours into the simmer stage! Prep time was already 2 hours before that 5 hours!
Tomorrow I'll be using one fourth of those finished mushrooms along with a couple beautiful prime ribeyes in a Steak au Poivre supper with my wife. Needless to say lighting Remy Martin cognac just to burn off the alcohol content has to be worth the effort of bringing it all together!
And lastly...Brent...peace be with you and your loved ones.

It was late and I neglected to take grill pics, my bad. I used dry aged loin chops from my latest dry aging project, along with a grilled butter lettuce and Kumato tomato salad and fire roasted corn.

I couldn't go all-in, but got the main course done and it didn't disappoint. Will keep this one in rotation and will have @bgebrent in mind each time. Rest easy Brother!

Finally got around to my tribute cook, which has been on my mind for some time.
I picked Brent’s bulgogi tacos

Bulgogi marinade per Brent, with extra Korean chile powder.

Napa cabbage slaw (I added spicy fish cake, radish kimchi, and hot anchovies later).
Plated:
Some memories of Brent popped into my head to keep me company as I cooked and tried to recreate the pics of his cook. So good. I must make this again.
