I butchered (cringe now) some bone in chuck beef short ribs.  Trimmed the beef from the ribs, removed excess fat and all tendon/silverskin. Bones kept for making stock.  Marinated for 24 hours in soy sauce, mirin, fish sauce, sesame oil, brown sugar, garlic and scallions.  Seared hot and fast for some Mexican street food. Made a slaw with Napa, red radish, cilantro, scallions and avacado.  Dressing and reduced marinade finish.  Nichole said it’s the best taco she’s ever had.  Mission accomplished.
