I'm in Fredericksburg, VA, and I have an XL and a medium.

    2 pounds 80/20
    1 pound breakfast sausage 
    chopped/sautéed sweet pepper, onion, celery, garlic
    1/4 cup favorite bbq sauce 
    3 tablespoons bbq rub 
    panko
    egg

    mix meat in a bowl and add egg. Sauté veggies until soft and fragrant, mix in bbq sauce and rub and heat through. Add to meat mixture and mix in some Panko to get a nice consistency. I put plastic wrap in a loaf pan and put meat in it and refrigerate for a few hours to set up, then remove from pan and smoke at 275 until IT  of 155 and then brush with more sauce until it caramelizes

    One egg for three lbs of meat? I would have thought 2 at minimum, maybe 3. Meatloaf looks great though so can't argue with that.

    Devil's Backbone is good stuff. I have a couple of bottles left from my last trip down your way. Vienna Lager I think. Can't get it up here. 

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Yes, you’re right. I usually use 2 eggs and that would be why tonight’s was drier than usual, lol. That’s what you get when you try to do too much at once! 
    Vienna Lager is great. I usually visit their Basecamp over in the valley every fall, and sample a bunch of their beers, but Vienna is my favorite

    Oh, MAN that looks good!  My mouth is watering.  I haven't made meat loaf in ages, and I need to.  Gosh, that looks GOOD!

    Try adding some salsa to your mix for a little extra flavor. I had a chef give me that tip once, have never looked back. Just some simple Pace will work. Thank me later. Your plate and meal is all out Gawjus. Cheers.
