    Are you talking about Zapps Cajun Crawtators, or some other chips called Crawgators? Couldn't find the later, but I'm happy to try them if I can find them around here.

    A little strange that your wife’s out of town and you went for such phallic shaped cuisine. 
    Finally!!

    I was wondering how long it would take for someone to make a comment about that, because that's exactly what I thought when I was shaping the rolls.

    But I was expecting something more like "there's an extra testicle bun in the mix".

    Refrigerated overnight to let it all get friendly.

    Grilled up the Tejas. 


    Lay down some of the Tejas drippings down in the cut roll, and a bit of the chili, so the chili hit the tongue before the meat. Then Tejas, chili, sharp cheddar, and onion. Flamed the cheddar and onions to add an extra flavor note to the whole mess. 

    Plated shot with Zapps Voodoo chips. I have no idea why folks bother eating any other chips. 

    This, my friends, is the face of glory. 


    This honestly ranks as one of the best things I have put together. Instant foodgasm. 

    And yes, those are crushed pork rinds on top. Because it seemed appropriate. And because I can. And because SWMBO is out of town.

    whoa. things just got serious up in here on the sausage front. I made 6lbs of brats yesterday and today I'm making 9.5 lbs of masalwurst and 10lbs of snake river farms brisket TX Beef Sausage. Still not worthy of this post but I'll post it up when I'm done.

    And I’m sticking with the Voodoo. I like the vinegary tang. 

    And said 4yo has some part of him flailing at nut level at any given time. Better wear a cup.

    Can you share more about the homemade buns.  Those look great.
    Modified from Jeffrey Hamelman's "Bread" 2nd ed.  Makes 10+ buns (depending on size). 

    AP flour           500g
    Milk                 230g
    Egg                     1
    Butter, soft      3 TBSP
    Sugar              1 TBSP
    Salt, table        2 tsp
    Yeast               1 TBSP

    - Mix the dry ingredients
    - Add softened butter and incorporate until you have pea sized lumps
    -Beat the egg and milk together, then add to dry ingredients.
    - If using a KA, mix with dough hook at speed 1 x 5 mins, or until the dough comes together.
    -Cover and rest for 20 mins
    - Mix at speed 3 x 5 mins, or until a "tongue" forms and laps the side of the bowl. The dough should be pulling away cleanly from the side of the bowl.
     - Knead by hand briefly, to form a smooth ball.
    -Cover and bulk ferment x 40 mins.
    - Divide into 75g (or however many buns you want to make) sub-dough balls.
    - Roll into 3.5-4" discs (or depending on the diameter of your burger patties) and lay on baking sheet lined with parchment. 
    -Cover with plastic wrap and let rise for 1 hr. Turn oven on at 400°F.
    - Bake for 10 mins or until  tops of buns are brown.
    - Remove from oven and brush the tops with melted butter. 

    I dare you to buy buns at the store after this :) I have bought buns only once (under duress) in the past 18mo or so, and I regretted it after taking the first bite. 

    I have made a sourdough version of this recipe, which also turned out well. 

    Hope you enjoy them as much as I do.

    Interesting.  I've never gotten a vinegar tang from the voodoo - just a cloudy mishmash of flavors.  I usually like a vinegar chip.

    I see 4yo doesn't fight fair.  I may have to rethink my strategy.

    WOW !!  Everything looks ridiculously good !!!   I want to try the buns . . but @caliking could you PLEASE post your recipe using SD starter (by weight if possible) ?

    I have repeat cravings for three simple things that I must quench or things get bad: 1) pizza 2) buffalo wings 3) chili dog (usually skyline bc I grew up with it but love homemade & yours looks absurd)

    I've tried a sourdough version a couple of times, and they were pretty good too. 

    AP flour           425g
    Milk                 195g
    Egg                     1
    Butter, soft      3 TBSP
    Sugar              1 TBSP
    Salt, table        2 tsp
    SD starter        150g

    You will likely get more rise/oven spring if you use bread flour.

    Sourdough will take longer. Bulk ferment will take 2-3 hrs (or more) depending on the temp in your kitchen. Let it rise until 1 1/2 -2 times its original size. Maybe 2 folds in the first hr.

    Then shape the buns and let them proof, covered at room temp for 1-2 hrs (do the finger poke test to check if they're done). Or proof in the fridge overnight.

    And don’t feel embarrassed about the tubular and testicular shaped vittles... many of our finest delicacies are in the shape of tubes and b@lls:  Bananas, hotdogs, chili dogs, corn dogs, sausages, shishkebobs, popcicles, meatballs, smoked turtle eggs, Scottish eggs, etc...  the list is infinite. Lol

    Hope you like the buns. They are significantly better than store buns in terms of taste, flavor, and texture.
