It Wabbit Season

Options
 A good friend at work has started raising rabbits and he brought me one to try out. 

Seasoned with SPOG and put some EVOO,Fresh Rosemary and Thyme 

 Then it went swimming at 146° for 2hr before it hit the egg 


 Carrots went swimming with butter and rosemary for about an hr then the wabbit went on the small at 400° direct for some color 



And plated with mashed cauliflower n gravy

    I really think it could  be treated just like chicken breast.   Hot n fast or SV with a hot finish be it the grid or CI skillet

    That looks awesome.  But no way I could pull this off at my house.  SWMBO considers rabbits as pets, not food.

    I honestly don’t know about braised rabbit.  I can tell you that SV rabbit was very tender.

    Bird screening works for us.  Doesn’t provide any protein mind you.

    Solid decision with the Sous Vide. 

    O have 3 of the 7 I popped this spring still waiting.  Think I may go this route.  I am digging the cauliflower and carrots. (I appreciate the irony)

    Agree. Bunnies are on the "no cook" list at my house. too.

    Brother 69, have you ever tried rabbit in a pressure cooker? If so, do you prefer SV over the pressure cooker? I have fried young, small rabbits for years. However I always finish the large and old rabbits in the pressure cooker with gravy after frying. Just curious as to your thoughts and preferences.

    @sgh - most of the rabbits I’ve had have been tame young ones around 1 1/2-2lbs most.  I’ve only SVd followed by the egg either go smoke or searing.   I’ve been thinking about pressure cooking one.  What is you procedure?
