Blackened Flounder over Grit Cake with Creole Crawfish Cream Sauce
Saw an iteration of this on a DDD episode and wanted to give it a go. Made the grit cakes with Geechie Mill red grits (compliments of @DoubleEgger) and cheddar. Fried these up stovetop. The blackened flounder held up nicely to the cream sauce. Great mix of flavors. Vanilla only offering OT category tonight. Seems appropriate. Cheers.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Well, I guess if you have to blacken grouper, and make grits, then have to do a creole crawfish cream sauce, that, right there, must be the exact way to do it.
