I see beef chuck is becoming popular on the forum so I wanted to share how I make it. 3lb beef chuck rubbed with Meat Church gospel. Smoke it for 3-4 hours until I like the coloring. Let it cool and put in fridge over night. Next day, slice up a couple onions and line the bottom of the crock pot. Add the beef, beef broth, and some sweet baby ray’s. Let it go another 3-4 hours until it shreds.
Pile on a potato roll with pickles, cole slaw, and nacho cheese Doritos.

Man, that looks killer. Want to do this cook bad, but SWMBO says it will be too fatty for her eating choices. I'll have to do it sometime for a get together with friends.

I'm just curious- do you think the overnight refrigeration adds anything, or is it more just for timing/convenience? In other words- if you went straight from the egg to the crock pot do you think it would be just as good?Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
Excellent, the flavor in the meat really sets up when you can wait a day or so. Looks great

Truth be told, I prefer chuck roast to a brisket. Don't get all excited, I'm not hating on brisket. I just prefer the chuck.
