Followed a recipe on this and it was truly outstanding. It will be repeated. Recipe is from Epicurious.

Ahhhhh, that is some good chicken! Love it.
Your post reminded me of a similar cook I did a year ago and have to repeat.
I'll repost it below because one of the 3 recipes I looked at was yours, and folks may be interested in the pictures of the cook progress and the results of other eggers. Man that sauce was something.Authentic PERUVIAN CHICKEN. Hands down, best I've ever made.

Did it tonight. Was fantastic. I did put a pan of taters under the bird and they roasted in the fat and spices. This was a good idea. Thanks for posting Brent. 100% thumbs up and everyone went back for seconds.
