I would love to try some crawfish sometime. Never tried it in all my years. Never even seen it on a menu where I live. At least I don't think.

The China Village Buffet on Camp St in EP offers crawfish along with shrimp and a crab salad on the appetizer table. They are served cold on ice. I always try 1 but never 2.saluki2007 said:Yes ron those are the crawfish. Do you know of anything like this around here. I miss going to crawfish boils. When I lived in memphis I went all the time. Purge/rinse them first, then cook. Pinch the tail and remove the head. Suck the head and discard. Peel and eat the tail.RRP said:Help me here - cook whole with no cleaning, hold by the head, eat the tail, pitch the rest. Move on to next one. Right?

"purge" meaning jut? With all the steps you describe then there is more effort involved in eating them than I thought! Thanks for the explanation to this land lubber! Also about those big puffy purple bags of them - were they still alive at that point? If not how fresh do they have to be to be safe?buzd504 said:

They are alive, when kept cold they go a bit dormant, like blue crabs. No gutting them, just rinse them real well. Cook 'em whole. It is a lot of effort, but it's fun. Would take a loooooong time to get full. It's more of a social thing, IMO. Just like blue crabs..Apollo Beach, FL

Many, Many years ago at my first job, I worked at a research company who had a contract to develop an automated machine to separate the meat from the crawfish tail. We went as far as having it patented.
I left the company shortly after the machine was patented.
I don't know if it was ever put to commercial use. I do know it takes a lot of crawfish to make a pound of tail meat.
I know the brand of tail meat sold at Walmart has an American sounding name, however it comes from China.
Is there any commercially available crawfish tail's produced in America?
