@Thatgrimguy I believe that thermometer should work. If you have time you can wait it out and look on eBay for them. They are much cheeper most of the time. Just have the builder weld in the NST threads. Also not sure if you have included on your unit, but I had a few extra 1/2" NST threads welded in in a few spots to move thermo around or mostly for a probe thermometer. I use a thermo works chef alarm sometimes. Just one more thing to ponder.

I'm going to do a 50-500 which will cover everything I do in the main chamber and in the vertical I'm thinking a 150/750 because I'm going to try and do pizza and bake bread in there.

@Thatgrimguy - I am starting to think your "unit" build may require much more technical skill than I could ever bring to such a project. Congrats on addressing all the details now so you can straight-up enjoy once delivered.
I really should put this thread "off-limits". Talk about building the dream. Again, congrats! "Better to be lucky than good any day"-but there is definitely a whole lot more than luck at play here.

I went to Shirley today as planned and dropped off my fryer, my camp chef 3x stove, and my griddle to be installed and modified! Great people, great operation. I got to see the new, almost finished shop that they are just waiting on electrical and a C/O. My smoker is scheduled to be done by Feb 1! Hasn't started yet! That's rocking!

Ended up going with a 55gallon water tank because it had the smallest foot print I could find. It's tall at 18x18x44". At least this way I can fill both 60qt pots and still have 25 gallons left for dishes and hand washing. You'll benefit from a bladder tank. Keeps the water under pressure without the pump running all the time.

I actually just got done talking to Tyler Shirley. He asked me about timing and I told him I could just as easy come up Thursday. So he's going to have a little more time to get this beast all together. I did get some teaser shots with it on a cart. Tomorrow it gets mounted onto the trailer. That vertical alone is a HUGE smoker... I can't wait to see this thing! Waiting stinks, but I'd rather it not get rushed. My charity cook isn't till Feb 9th, so I'll have all weekend and Super Bowl Sunday which falls during Mardi Gras.. so I'll have a lot of fun next weekend. I doubt it will fall under 200 degrees for a week after getting it.
