I'd definitely go double axle.  It'll give you a little insurance if you blow a tire in the hot as hell area where you live.
Single or double, I'm really anxious to see this new beast of yours.  I don't know how you sleep at night.

Edit - just saw that you want to move this by hand.  That's a good reason consider single axle.  Are you sure you could move this by hand?  One of my trailers is single, with about 3500 on it and it's pretty tough to move with a trailer dolly on flat concrete.
I'm dreaming of smokers... I can't sleep at all. My wife is really about to kill me. I'm not going to be able to think about anything else till I have it in my possession.  I may break her in with a whole hog!

I really hope I can move it with a trailer dolly. I have 3 members on my comp team so I'll have two pushing and one person steering/pulling with the dolly.  There is no way I can get my smoker into position with the RV so I need to be able to maneuver it at least a little.

That thing is super cool. But damn it if it doesn't cost $1200+

If all else fails I may be forced down this route though. That's the best looking option for an electric that I have seen.

I've never been to a competitions, as BBQ just isn't big like it is in your area.  I'm picturing eggfests - grassy areas and gravel lots?

With three people you should be fine as long as the ground is level and not too soft.  I bent up my dolly as if it were cardboard trying to move my 3500lb trailer on flat concrete.  I only mention it so you can get the heaviest dolly you can find.

I hope to meet up with you at a function someday, and lay eyes on the beast myself.

To make hooking up easier with your RV, I have found this to be invaluable:

always keep in mind it might be easier to move but the peace of mind when you get a blow out on the highway with a tandem axle is much better.  I'm looking forward to your build congrats again!

I own a car dealership that does 3500 repair orders a month. I just haven't seen enough blowout risk in my time to merit it. Properly maintained, quality tires that aren't near there weight rating just doesn't scare me.   I mean every car I own is at the same risk and have never had it happen. The risk is when people let there trailer tires dry rot because the tread hasn't worn down. Time is the killer, but I know how to maintain stuff like this.

I really don't want a double axle. Moving it by hand with a cart will be hard enough, with a double axle it'll be impossible to do by hand when I get to a comp.
Just a thought.. Have you seen the motorized attachment that the coffin vault guys use for moving the vault into place in the cemetery..It has a remote control which you can maneuver the trailer as you walk behind..

Yeah, just like eggfests.  Usually in a park or a parking lot. I won't need to move the trailer more than about 10 feet but that can be a lot with 3500lbs.  I plan to do a lot of travel with it in tow, if I find myself in Arizona I'll definitely PM you.

I saw one that was a freaking robot. But it was $4k  The whole trailer is "only" 10k

Check out some of the aircraft websites, you may be able to pick up a used electric aircraft dolly cheap.  One of the recommendations on one of the sites was to modify an old rototiller into a powered dolly.

I need to sign up for comps at the places you guys are competing.  I'd say more than half of ours are off the pavement usually at a fairgrounds or city common area.  Hills, mud, dirt, rocks, holes, you name it.    Even with that said you should be fine moving your single axle rig around with 3 strong men.

Hope they send you pics during the build so you can post em up.

If you get one of those vault machines, you could have a whole new side job.  Drop the dead guy in the ground and cater the meal after the funeral. This could turn into a real money maker for you!

In all seriousness, can't wait to see the new set up! Congrats!

I wonder how well one of these works.  I'll never have to move the trailer far, just off the back of the RV and then around the side into place. 10-15 yards tops.

A lot of it depends on the total weight of the cooker. Mine is right at 2500lbs. We use a dolly they made for it. Is it heavy...yep can it be done yeah. My wife, 12yr old and I can usually handle it. 99 percent of the time we haul it with the pickup and can get it pretty close to where we need it but putting it in the garage is all us. I have also found guys like to help others when you are struggling to move your cooker and lend a helping hand.

they should have a pretty good idea on what it will weigh so that is where I would start. Then factor in the weight of the stuff you will load on it.

I think I'll be fine. At home or work, I can use a truck and put it anywhere I want it basically. I just worry about pulling up with my RV where I can't just maneuver like I can a truck. But at competitions there are always lots of friendly people willing to help.

That last 7 months were hard, but I was still planning it out.  This month is TORTURE, everything is planned, designed and paid now... Just got to wait for delivery date and pray it's in time for me to get some cooks in before my Fundraiser..

The fundraiser will be my first whole hog too. (We are doing a lot of crawfish as well)  So I have a lot of new on my hands with a lot of people depending on the outcome!

I have faith in you. You can do a butt so just think of it that way....a great big butt. I would have more stress over the crawfish, but I have never cooked them either.

I appreciate that vote of confidence. I think I'll be fine, just going to get a 75lbr, inject her and cook racing style. The crawfish are easy. We do quite a few pots every year and have since I was a kid. Problem around here is everyone thinks they are the crawfish kings and you end up with too many cooks in the kitchen.

@Thatgrimguy - something I learned a long time ago..."When in charge, be in charge."  And I have no doubt that you run with that philosophy every day at work-so just carry it over for the great event you are putting together.  Like you need any pearls of wisdom from me  ;)  But it is Saturday...and a day drinkin' event for sure.
