I chose to order it in the 3/8" fry size, and I'm happy with my selection.
I'm going to take off the rubber feet and mount it vertically in the laundry room. The cutting grid and push plate unscrew for cleaning.

I just watched the video of the Vollrath 55000 - you aren't messing around! Really cool.
Are the blades sturdy enough that you could do fries with it?

Blades are sharp, i don't know how a potato will do vertical, supported only by the pusher. If i try it i'll let u know. We were planning to get an apple slicing/corer blade but at our volume it isn't really justified. My $5 handheld corer slicer does fine for 1-2 lolLBGE, AR. Lives in N.E. ATL

I worked as a fry cook way back in the day and we always pre-fried the fresh sliced potatos, then fried them again when ordered.
The boss said it was the best way to make "crisp" fries.
Do you find that to be true or not? -

John, I don't know enough to say. I've only made fries maybe a dozen times in my life.
I did make them again today, and I cooked them longer until they were crispier. I liked them a lot better. Not sure I'd bother double frying them, since I've got the result I want.
BTW - deep frying outside is for sure the way to go. Takes all the mess out of it.Phoenix -

This is the double fried french fry recipe I use with good results. I usually make mine a little wider like a steak fry. Great with ranch dressing for dipping.
French Fries
Ingredients
* 4 large russet potatoes, peeled and cut into 1/4 by 1/4-inch thick batons
* peanut oil
* Salt and pepper
Directions
Rinse cut potatoes in a large bowl with lots of cold running water until water becomes clear. Cover with water by 1-inch and cover with ice. Refrigerate at least 30 minutes and up to 1 day.
In a deep-fryer, heat the oil to 325 degrees F. Be sure not to fill the oil beyond the maximum fill line.
Drain ice water from cut fries and wrap potato pieces in a clean dishcloth or paper towels and thoroughly pat dry. Add fries, a handful at a time, to the hot oil. Fry, stirring occasionally, until potatoes are soft and limp and begin to turn a blond color, about 6 to 8 minutes. Use the basket to carefully remove fries from the oil and set aside to drain on paper towels. Let rest for at least 10 minutes or up to 2 hours.
When ready to serve the French fries, reheat the oil to 350 degrees F. Transfer the blanched potatoes to the hot oil and fry again, stirring frequently, until golden brown and puffed, about 1 to 2 minutes. Transfer to paper lined platter and sprinkle with salt and pepper, to taste. Serve immediately.
