pastrami!

These two went in the egg this morning. About 5.5 and 7.5 pounds. Tomorrow I'll steam and slice. I pretty much follow the process from 'amazing ribs' (close to Katz's). Turns out great every time. Steaming is vital though.

    Do you have a steamer @mrw123 ? Trying to figure out a good method to do the steaming portion of that recipe.

    I use my crock pot but you can steam with a couple of disposable aluminum turkey pans.

    @nolaegghead just in the oven with holes cut out of one of the pans? Sorry I'm being subjected to watching my wife's tv shows right now and am drinking to compensate...

    You want to put some water in, maybe a quarter inch, then a rack to keep the meat out of the water.  Cover it and put it on a burner, stove-top.  Boil the water to make steam.  If you have a crock pot, same thing, lift the meat out of the water and you can put it on high.  Check the water level every now and then.

    Did the stove top thing the first time I tried making pastrami and it was good, but didn't have any outside people to review it. Of course I always am disappointed with my own first results. 

    I've gotta a corned beef in the freezer that I didn't freeze as quick as I should of right after St. Patricks day and it was a leaking a decent amount of blood before I froze it. Should I just get rid of that one and get another or give it a go?

    I'd give it a go, nothing to loose.  If you haven't soaked it, do that if you're making pastrami.

    Thanks @nolaegghead will be doing at least a 48 hour soak, changing the water 3-4 times unless you recommend something different.

    overnight is fine.  If you change the water once you're ahead of the game.  Unless you don't have much volume of water.

    Thanks again nola, I'm off of work Friday so might start the soak tomorrow, smoke the meat on Friday and steam Saturday.

    Do you have a steamer @mrw123 ? Trying to figure out a good method to do the steaming portion of that recipe. 

    I use a roasting pan over two burners on the stove top.  I put the pastrami on foil on the rack and fill with as much water as I can before it reaches the bottom of the rack.  I cover the whole thing with foil (tight) and just let it go. After an hour I put in a thermometer and pull it when it gets back to around 190. Watch the water level- I usually have to add more.
