    Just about done.

What’s the rub Dwayne? Cool color on those.
The left rack is DP Raging River. The right rack is Witchy Red. That was right after I sauced with a sauce I made up with SBR, Sriracha, ACV, and more Witchy Red rub.

@DoubleEgger - thanks for the input.  Like you I am partial to the lower temp cooks as I think you get a better rendering during the cook.  I'm no expert but I feel that helps with the texture once at the finish-line.  Dang, that's a high-end sacrifice to the cooking lab but I'm sure you will enjoy across the eating spectrum.  Every one is different.  That's what makes the cook so much fun.

Thanks, man. We bought the place about a year and a half ago, and it’s been quite the project. Always something else to do, but it’s been fun. Come on down any time, it’s a straight shot down I 85.

A fundamental rule of birth control/kids...You should only have the number of kids that you have available adult support duty to assign down-stream.  If living with easy access for family support (aka grandparents etc) the number is adjusted accordingly.  That way when the demands of being everywhere all the time hits you have it covered.  Food for thought and other activities...
    Have a great evening.
