I read that but that's a detail I'm not interested in as they have clearly spent a lot of time sorting that out and I'm more interested in any technique tricks.  Now back to our original programming.

@Foghorn -  sounds like a great endeavor.  Post oak for the fire?? Curious as to turn in time with a 5 AM fire start.
Feel free to share any tricks of the trade you acquire (and they will let you release).

Seriously, everything is injected. Chicken is also brined. And chicken skin is defatted. Lots of little details. More than most would want to do. Excel spreadsheets on an iPad in a holder over the prep area.

I couldn't pass up free seasoned oak already cut to size. 1 bed loaded, one to go. Now the hard part....I need to figure out a way to split it for the smoker.

    Nice score V!!!
    That's the worst part, splitting.
My buddy Duane has a hydraulic splitter, and it is awesome.  You may want to look into one.  The guys split it for me, but I've borrowed his before, for a case of beer.
I think it was around $1500 if I recall.

I'm due for a box full this month.
Can't decide between wild cherry or hickory....been stuck on the aroma and color of cherry.

No need to buy or rent a splitter for a couple of truckloads. A maul will handle that with ease.

You need a Fiskars x27 splitting axe. I think they are 50 bucks. Lighter to swing than a maul. @WeberWho

@kl8ton - thanks for the video.  I have been splitting cherry wood with a mature hatchet for the past year.  The Fiskars X27 is on the way.  Just another opportunity to part with $$ on the forum.

    Thanks for the tips! @Focker @DoubleEgger @kl8ton

That was a workout. 20+ trips with a wheelbarrow up a steep hill. I had the neighbor lady ask what I was doing from the other side of the fence. I told her I was hauling wood up from the bottom of the hill. Her reply, "Oh I thought you were training for the army". Finally home and the wood is stacked for the meantime.

Now to try and figure out what to do with splitting. My parents have a 125'+ oak tree that needs to come down. They will have it dropped professionally but my Dad will go after with a chainsaw. So I should be set with oak for years. I just don't know what day or year that oak is coming down. I could see picking up a 2nd hand gas powered splitter for that. I can't afford to own $600+ 2nd hand splitter at this point of time. My Dad's friend has a splitter but it's not worth the hassle and bs that goes with it. Renting one is $45. I'm not sure it's worth the rental for a face cord worth. Manual jacks seem like a pain. I'm not sure how well an axe would work for splitting everything down to a beer can sized splits. What I might do is pick up an electric splitter 2nd hand and do little amounts at a time. Maybe this winter I can see if I could maybe put together a splitter that's worthwhile for real splitting. I'll keep my out on Craigslist and see if I can find one on the cheap or possibly a project one.

Just talking about this subject makes my back hurt.

I've got the Fiskars chopper and splitter.
My back will bark for a couple of days after use.

60 bucks for a split load is worth every single penny for me.

At 40, I work smarter, not harder.
And I'm no Paul Bunyan with a maul.
    Fock that. Lol

This is possibly the most disgusting platesetter I have ever seen! Beer and beef look great though!

I'm not proud. I need to clean it. It actually has a crack in it so I'm sure I'm going to have to replace it.  But hey, isn't this a no judgement zone??
