    Isn't it awesome to have a huge vat of hot oil that will recover very quickly? I love my Cajun Fryer. Enjoy the BC - it is so great to have a powerful fryer. Consumer-grade fryers are useless.

    I'll have to try with vinegar.  I used truffle oil (real stuff), shaved romano, parsley, garlic, salt, peppah.  I need to slow down with this new toy or I'll be as big as a house.

    I did my beer batter a bit too thick at first, learned my lesson, thinned it out and much better. Used a basil lemon Abita beer.  Not that you can tell, much is lost in the fry, but the batter was delicious.

    Salt and vinegar. Malt vinegar too, never wine. Can you get mushy peas?

    Chilli dog for dinner.  This is my second helping, the chilli was good.  I added extra apple wood half way through the cook and the chilli got a really nice smoke taste.

    Self-medicating what I'm fairly certain is a bruised or more likely cracked rib. Took me and my youngest for haircuts just across the way. Got there and realized I forgot my wallet, back home. Parked in the driveway and went in to get my wallet. On the way in I heard something, turned around and the Tahoe was sliding down our not that steep driveway. Dang ice. I sprinted to the Tahoe and wiped out. My arm was extended to the door of the Tahoe, landed on my side with what I'm sure is a nice bruise on my hip and a cracked rib or two. We didn't get haircuts tonight...

    It stopped sliding when it got to the sidewalk, thankfully. My little guy was in the back seat. All I could think of when I saw it happening was it sliding into the street and a car coming and not being able to stop. Thankfully, it didn't slide into the street, and there was no traffic at the time.

    Oh man. Glad nothing happened to the little one and the truck. Hope the ribs mend, but remember to try and take it easy. It may not seem like it, but you were lucky.

    Day two of the fryer journals.

    Made 4 batches of my version of Mr. B's truffle fries.  Delivered to three different neighbors.  They are the best thing ever you can eat.

    I modified my batter recipe and I nailed it.

    Here it is:

    One beer (I used a lemon/basil 12oz can of Abita or NOLA or something local that I have a few left in the fridge)
    1 cup flour
    1 egg
    Spices (salt, whatever - I used a JO from @Eggcelsior )
    baking powder - 2 tblspoons (my secret ingredient)

    Cut the swai into quarters.  Dried it in towels (VERY IMPORTANT).
    Threw all the batter ingredients into a blender and went to town.

    Battered the fish and into the oil at 370F.  Cooked until the color looked right - maybe 2-3 minutes. 

    Frikkin perfect fried fish.  The batter was light, not greasy, stuck to the fish like a second skin.  No flaking of batter, best I've ever had.   I got this down now.  

    SWMBO cooked some greenbeans and made tarter sauce.

    Fish was incredible and the fries are addictive.  Neighbor over for dinner, loved it.

    As an afterthought (and after dinner, oil was still hot), I played around with some onion rings.  Not great, need to work on that.

    The whole meal cooks up in about 10 minutes.  Some prep and heating of the oil adds more time, but this is a winner.

    What does the baking powder add? Curious to know, but that looks so good. I love fried fish, but I never found the the "Eureka" moment when making it, as you have. Congrats on an incredible cook, and thank you for sharing. I can't wait to try this.

    @DMW Bruised rib(s) - no bueno. At least that is the worst that happened. It could have been a lot worse and had a different ending.  Take it easy and

    That's a big bummer right there....glad it worked out ok for your little one. Now tell us about that self medication?
