The fan module also stays in the house when not in use. Thanks for the tips about the cover and thermometer. I grabbed a cover and thermometer a few months back. They have come in handy so far!
The other big issue I'll have is cleaning the smoker. I have to shut off all exterior water lines during the winter months. So cleaning it will probably be my biggest issue. This wont make the smoker very fun to clean. I suppose I can bring it up to the local car wash and spray it down if need be.

Messy plate, poor photo framing and the consistency was a little off, but this hit the spot on a cold night. Bison Shepherd’s Pie with potato crust that had cauliflower, parm and horseradish blended in.

One of my favorite Szechuan dishes is Dan Dan Noodles, yet oddly I've never tried making it before.
I made my own "chili oil" when I was learning to cook in Albuquerque, just crumble some japones chilis into hot oil, let cool, and run thru a strainer. Well, I let the oil get way too hot, and got a mushroom cloud when I dumped in the chilis. My hand went instantly to the burner to turn it off; good thing as when that cloud hit my face, I was instantly blinded, couldn't breathe and my skin was burning. I crawled out the entryway, fumbled with the front door, and face-planted into the snow. Wow, that hurt! Had to open all the windows to air the place out.
Yesterday was my second attempt at home-made chili oil, went much better (my IR thermometer was useful here). Szechuan peppercorns, a cinnamon stick, star anise, cardamom pods, and two bay leaves are toasted in a pan, then poured into the not-so-hot oil, and let sizzle for four minutes. A half-cup of chinese chili flakes are put into a clean jar with some salt, and the still-warm oil poured thru a strainer over the flakes. I did this yesterday, and let it sit overnight.
Dish itself was easy enough. Marinate ground pork in minced garlic, ginger, Shao-Xing wine, soy and black pepper. Soften egg noodles in boiling water for four minutes (added the baby bok choy the last minute), stir-fry the pork in a wok, add a sauce made with the chili oil, sesame paste, soy sauce, dark soy sauce, toasted/ground szechuan peppercorns, and sugar. Add the noodles, toss again, and plate with sprinkle of spring onion.
Was tasty but quite greasy; I need to remove the ground pork when its browned and drain the fat before continuing. First time I've used my new wok on the Bluestar at full afterburner; fun!
There's an Asian market in Roy, Ocean Mart. I've been inside the door where they have some lunch places to eat, but have never really been in the supermarket portion. I went in yesterday, to find a couple of the ingredients, the place is huge, about the size of a K-Mart (in fact I think that's what it used to be). I spent two hours looking at everything. Lots of fresh yet unknown vegetables, whole fish/squid/other unknown things, live lobsters and crabs, a full aisle of just dried mushrooms, all kinds of thinly-sliced raw meats, at least 75 kinds (I noticed wagyu) in the frig. They did not have whole plucked fowl like the grocer in SLC's Chinatown, nor did I see any bat. The prices seemed to be quite a bit lower than my usual grocer, I will be going there more often in the future; so many neat things to try. Quite a gem in northern Utard, which doesn't have a large asian population.
I could not find "preserved mustard root", which the above dish was supposed to have, and the asian gal I asked knew "mustard" in English but not "root"; I'm sure they had it, I just couldn't find it.
Oh, and I found the new cast-iron wok I bought from San Francisco at $42.75... for $11! Ah well.
