Chuleton (Txuleton), pork and sea bream.
Reverse sear this time to render the fat. About 15 minutes indirect around 350F, heated very slowly inside - but once the bone was 'hot' it got a move in. Wrapped in foil and covered with the probe in, it went from 100 to 110F IT on it's own. Finished with direct 600F for about a minute per side and rested in a foil blanket. Forget the close up of the beef, but it was rare 52 C (low 120's F).
Pork loin about an inch thick with rind that I salted about 30 mins pre cook. Similar method to the beef, but longer direct, after beef was pulled. Few minutes skin down to finish the crackling.
Bream - simple olive oil, salt and pepper - couple of slice of orange for a bit of flavour. Direct for a couple of minutes and there you go.

@johnmitchell we had a leak about 5 years ago where one of the roots made its way to the hot tub lines. Jen we had it fixed, the reinforced the whole hot tub area with more concrete. We aren’t sure if it was their roots since a palms roots are a ball. Could have been the Burfurd (spelling) tree in the corner.Midland, TX XLBGE

I just got back from walking around the backyard as the freshly split peach wood dried on the deck table.Why was I walking? This morning I noticed the first of the raspberries started to ripen as I was doing work. I forgot how good they were.So when I was done my work for the day, I took a glass of wine and a strainer and picked some more. I did not think there was going to be so many considering 2 days ago I did not see one that was ready to pick.Wow that red really messed with the phone camera ... anyway.. all that while ribs were on the large.I hope you had/are having as good of a Sunday as I had.--------------------------------------------------

Sitting on the patio, just started my second Mai Tai. Smoked a cured belly for bacon this morning, some potatoes for loaded baked potato salad this afternoon, and spinning some wings for dinner now. Hope all of you feel as good as I do right now.
