    I am lucky enough to have a 2 hour layover here on a Friday night.   If I can’t be at home or at Dan Nichols Park, I might as well be here.  
    Popeyes dropped their chicken Po-boy from the menu Corp wide. I am all broke up about it. I sent in a virtual complaint. They didn’t respond. Enjoy it while in the ATL.

    Sanding the Blackstone griddle top smooth before I take the time and season it. Going to see what griddle top I like more between the new and older version. My sister in law called dibs on the older 36". Just need to figure out what top she gets with it.

    Weird.  Never seen my street flood before.  Even through all the hurricanes. 
    We have had torrential down pours since Thursday evening. It has been relentless. Right up the road from my house, the Perkingston camp ground is underwater. The water came up so fast that the people wasn’t able to get their campers out.

    @sumoconnell Yup.  Once basil or cilantro flowers (bolts) it's almost best just to let it seed out and use it to replant for next year's harvest.

    Grilled a steak and made a "brined baked potato", an idea I've wanted to try.  Dissolved a Tblspn of salt in a couple cups of water, pricked my Russet all over with my sausage pricker, and let it soak for about an hour, dried it off and baked to 200º.  
    Seemed to be seasoned just fine, I didn't add any salt, but would like to try it again with a "control", unsalted spud, side-by-side.

    Update:  Turns out I did get water in my car.
    Son of a b!tch.  Dodge the hurricanes, levee breaks and now this.  That truly sucks.  Only the passenger compartment...?  I'm sure you have wet-dry vac(s) but don't wait to get rid of the moisture.  What a screw job.  :o
    On the other hand - nice companion for Jazz.  Time to train regarding raccoons.

    Finished product...Jerk chicken, corn and Cajun butter, grilled pineapple! I need to work on my picture taking skills for sure.


    I noted you had actual pimento wood for the cook, did it make a big difference in taste that you could tell?

    @Botch So it definitely helped. It still is not quite the exact same taste but it's pretty close. I did not go full tilt with larger hunks of pimento under the chicken and I didn't have pimento leaves, I only used chips in a foil pack. I did put some larger chips directly under the chicken between it and the grate. This is the first time I've used pimento wood and I would say this was the best jerk chicken I've made yet.
