    @johnmitchell. What kind. Of camera is in the birdhouse? Is it hardwired? Bluetooth or WiFi? That is pretty cool, and the picture looks really good.  You going to leave it there the entire season?

    Yes that is a wireless camera but I am using the hard wire AV/power option purely for convenience and as the camera does need a constant power source.. I leave it up all year round as in winter I have Downy woodpeckers that roost in my boxes..

    Thanks guys they were really good. We just took the kids to the top of Shawnee mountain to see the view. These people win for best view.

    Made some homemade scotch eggs and potato skins for lunch today with some also homemade thousand island dressing. Corned beef on the egg for some rubens tonight.

    I've had it with Royal Oak and splurged on something better.  I'm lighting it right now and it is a world of difference.  Nice, fairly evenly sized lumps of charcoal.  No plumes of smoke when lighting and it is clearly burning slower.  Going to buy some Rockwood and compare.  No going back now.

    @botch 1/2 stick butter 1/4 cup crispy panko 4-6 cloves of garlic - lots of grated Parmesan and a splash of  worcestershire sauce it’s a game changer for flavor on steak

    Smoked some short ribs today lost the bone off one. Salted and back in the fridge for 2hrs then in the smoke kept between 260-290 2 chunks hickory seasoned with good ole holy cow. Had them in smoke for 2.5 then in foil about 1.5hrs then back in egg to firm up bark.  They’re resting now for probably an hour, I hope they’re good. I’ve only done short ribs once before and it was probably 5 or six years ago

    This is actually quite decadent already planning my next cook of short ribs

    Did a kids version of bangers and mash. Some potatoes on the PK then split, mashed and sliced with Colby jack Andy brats cooked on the PK then gravy and sour cream on top. Kids loved it.

    Atlanta grill company has 2 bags of Rockwood for $40.  Cool place to check out also if you haven’t been.
