We had friends over tonight. I grilled some sockeye salmon on the Hasty Bake. My wife made mango salsa. Friends brought take out pizza. There was other stuff as well.
I have two pork butts on the XL for tomorrow. One with just salt/pepper, the other with Dizzy Dust. The SP butt is for pork and sauerkraut. The BBQ butt is because they were in a two pack. Neighbors are coming over for lunch. I should go check the egg to see how temps are holding.They/Them

When getting your sous vide on, can you take the meat directly from the freezer to the bath, or is it better to pre-plan and have the meat at fridge temp first?And are there general rules of thumb as far as temps and time? Especially frozen versus fridge temp? I've been really good at vacuum sealing my leftovers, so I have rib meat, brisket, etc in the freezer. Just need a gameplan and idea on what to do next. Thx!Steve

No problem going from freezer into SV.Tack on a little extra time, maybe 30-60 minutes depending on how thick it is.
