@Jeremiah very good, but very different from what I was expecting. It's a lot more like a port or a sherry than a beer. Goes great as a dessert drink. I typically only drink an ounce or two at a timeXL & MM BGE, 36" Blackstone - Newport News, VA

@theyolksonyou ... come on now ... since I've installed KABs, I don't clean behind the fire bowl as much as before. I think the stir and fill approach forces more ash through the vent holes and behind the fire ring. With the KAB, most of the ash is removed with the basket. I don't even clean the bottom of the egg as much. Damn, I'm becoming a Georgia redneck!

I have been experimenting. There has been a never ending quest by eggheads to produce stick burner quality blue smoke from their egg at low temps for the duration of the cook. I think I can now approach it. Going to try this on a chuck roast at 200 degrees and see how the smoke profile compares to one of the big units. If it works (and I think that it will from what I have seen thus far) I will gladly share this method to attain constant blue smoke at low temps on the egg for hours. Here is the "true blue" at 200 degrees. The blue smoke at low temps is what most seem to struggle with. I think I have found a easy way if you have a chimney starter and a propane burner. I have had this steady uninterrupted blue stream for almost 8 hours now. Pretty impressive for a kamado.

My beer fridge is full of meat.
Turkey and ham for Thanksgiving, pork butts thawing for sausage making on Friday/Saturday.
Short ribs I need to repackage and freeze and an eye round roast for roast beef on Sunday.
Gravy pan with turkey parts, herbs, veggies, and apple juice. This will sit under the turkey as it cooks.

Sat down after dinner to check the forum ... then clicked over to see what "The Piano Guys" have posted on YouTube lately. That was two hours ago. Their music videos obviously don't appeal to everyone, but it they do you can get lost for hours. Two very talented guys who play everything from Country to Bach.
