Hard 8’s pitiful excuse for brisket. I think it was chopped for the guy’s potato in front of me.  Didn’t think he’d plop the excess on my plate too. Shady.  The slices you see are sirloin, the pile of mush is the brisket.

Not a fan of hard 8, which is a shame considering it’s 2 miles away from me.

  • My favorite hard 8 item is jalepeno creamed corn, in case you find yourself back there :)

Pork tenderloin (2) stuffed with a mushroom-onion-truffle stuffing, wrapped in bacon.  Smoked on the BGE at 400F raised direct for about 45 min.  Roasted sprouts cooked on the RB to go with:

    Looks good JIC

Pork tenderloins have been getting quite a work-out of late.  And that is a great looking platter right there.  Congrats on the cook.  Brussel sprouts for the enhanced win.
Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

It's where everyone at work wants to go once we get  here so I oblige. When it's good it's really good, but I think Sunday must be an off night. There wasn't a huge crowd or line like normal which I'm sure accounted the shoddy brisket. The sausage was unusually good tonight.

We almost went to Heim but got overruled.  I'll probably never get to go to the Pecan Lodge b/c of the limited opening hours.

Hard to go wrong with smoked sausage. Which one do y’all go to?  Coppell, Plano, or one I don’t know about?

Coppell I think... it wasn't far from the airport. Not much scenery other than an Amazon service center and other industry.

We wanted something light and healthy after all the pumpkin pie and gravy.  Chicken breast with Mad Max rub on the egg, veggies in the oven.  We really enjoyed it. I spiced mine up with homeground cayenne pepper flakes.

Haha yeah, that’s the Coppell location. Lots of warehouses around there!

A tester may be cheaper as noted by @theyolksonyou but the funeral puts you well clear of any additional issues.  =)

I was done and ordered the part I needed on Amazon. My wife thought plugging it back in was what I wanted (with an exposed wire)
