Ribs done ✔ and they were darn good!
I was on the fence as to if the 3,2,1 method produces significantly better results. I haven't done them this way in years. My Wife @HuskerMaMa said these were in my top 3 of rib cooks. So maybe the juice is worth the squeeze.
Egg was full of rendered fat of course. So, I put on the heat gloves, removed the grids and carefully 86d the hdaf that was shielding my PS. Then I bumped the heat to 450 until the plume of bad smoke cleared. We have an agenda I work tomorrow so I figured since the egg was hot I might as well get ahead of the 8-ball. Went ahead and baked the potatoes that we will be using for the potato salad tomorrow.
Next? Sure why not I've had a pot of black coffee by now
No pics for this because I was multitasking around the house. Cooked 20# of bacon on the grids. 10# for us.
Then 10# bacon for meal prep for a close friend of ours that is undergoing a major surgery Tuesday next week. And some more meal prep for our friend 8# of boneless skinless chicken breasts with real lite seasoning of Thunderbird Chicken Scratch. Lastly portioned and vacuum saved to make life easier for her. She thanked us/me over & over. We didn't tell her what I was cooking so much for until the end. It was a nice feeling to help her if even just a little bit.

Wine purchases complete. Some great wines will be added to the cellar. Avg rating: 97 Wine Enthusiast, 98 by Wine Spectator. Found a couple of '07s, which will not see the end of next week....and awesome cellar clearance sales...2018 is going to be the best year ever in Napa/Sonoma/Lodi.
2013, 2014....and a couple awesome 2015s.
Great finish to the best trip out west, or anywhere, for my 60th.
