There are inspirational moments in life.
Pause, look down, and admire your aged meat.
I may stencil that on my kitchen wall.

Breakfast Brisket Tacos with hash browns, eggs, avocado, and black beans.
Used some leftovers from my first Sous Vide and smoke brisket last night. It was a point from Costco. Mixed personal reviews on texture (everyone else said they liked it) but made great chopped brisket."Brought to you by bourbon, bacon, and a series of questionable life decisions."

I am with you on Costco prime packers these days. Most of mine goes into chili or burritos, after the first serving. It is still very good but, I too, have some "mixed personal views" when everyone else says it is great.
It is certainly better than any brisket you can get around here."Knowledge is Good" - Emil Faber
