    @DMW - hopefully FedEx doesn't hose up the shipment.  Sad day when SRF changed shipping carriers away from UPS.

    Suggest you get some steaks and attempt a triple reverse sear.
    Love you bro!

    I'm definitely going back the butcher shop to see if they still have bone in ribeye. That was a great steak last week.

    Just caught up.  So basically I need to TRex, then sear again.  Innovative thought @legume

    Getting ready for the neighborhood Baby Back Rib throwdown tomorrow.

    I was told by one of the neighbors, they were going to kick my backside this year. I reminded, said neighbor, he has made that erroneous statement each year, for the last 5 years. My backside has not been kicked as of yet.

    2018 brings new challenges.

    Getting out the Jimmy Buffett Margaritaville mixing station for Cinco de Derbo is the main one. That bad boy is buried.

    You could just sear one side first, then the other side later.  Maybe work some SV time in there somewhere.
    Love you bro!

    @lousubcap - Just received:

    Not sure I'm a fan of the new packaging vs stryo cooler, but it did the job and both were still frozen solid:

    Yeah, it's much easier to get the kids to accept candy from me when they see the Hello Kitty sticker.

    Just put a few dough balls in the fridge for a long cold ferment. Having family over for lunch on Sunday to celebrate Big Guy's 14th birthday and he requested pizza, mac n' cheese, and burgers. OK, I think we can make that happen.

    Those kids can bring it, such amazing palate and talent at that age.  They've definitely moved on and not stagnated/stalled at s and p brisket.  =)
