Sunday cook: Deer ham and Boston Butt
tarheelmatt
Posts: 9,867
My brother has been pretty successful hunting this year. Has a nice deer ham ready to cook, so I told him to bring it on. Picked a butt up last night for Monday and Tuesday dinners.
I am hoping these will be done soon. I have some steaks to go on too so I can enter the throw down. If not, I'll just cook them on the stove.
Been an interesting day and night. My little girl is teething since last night. Running a low grade fever and just a little cranky. It's getting better though.
More pictures to come later!
She's come up to temp
The deer ham. Poked holes in it and shoved butter and rubbed with bacon grease. Then rubbed with mustard. Coated with Cosmic Cow and Jim's Own Smokey rub.

Man what a day! Had a lot of company stop by today that impeded my progress. Didn't get to take pictures like I wanted due to time constraints, but go some at least. My brother wanted slices from this ham, so that is what I did. I pulled at about 160°. This would have made a great coarse chop. Still very tender, but not fall apart or mushy.I pulled the butt at 180° and let set for about 45 min and coarse chopped it. Man it was good. A little more work to do it like this, but I like the results better.Made a little Lexington style sauce to go along with the deer ham and butt.Finished the night with two bone in rib-eyes that I reverse seared. Followed with some roasted potatoes and stuffed mushrooms (spinach, mozzarella, and jack cheese).Pictures....Deer hamDa ButtRibeyeSliced deer ham...Shrooms...------------------------------

@blind99, thanks. She has actually done a lot better today. I can feel the tooth on her gum so I guess that means it has protruded. I have read that normally they are relieved when it break through the gum.------------------------------

Beautiful food as always. Although it goes way too fast, don't miss teething, or diapers, or not sleeping thru the night, or....I'm just too old for that crap.

Who knows! I'm guessing my kids got a fair amount of extra Tylenol when they were cranky and we thought they might be teething!tarheelmatt said:@blind99, thanks. Ok the steaks look fantastic but those mushrooms are killer. How do you make the stuffing - is it the frozen spinach that comes in the square package?Chicago, IL - Large and Small BGE - Weber Gasser and Kettle -

Make sure you season the mushroom too.SGH said:@tarheelmatt- Looks like a winner to me brother tar ^:)^ =D> ^:)^fusionhq said:That's great!! @Ragtop99, it was really good. My brothers girl friend tried it (miraculously) and liked it. So that was a good indication that it was good.------------------------------

My brother has a nice dear at the processor now. I told him to get a ham so we can eggsperiment with it. Now I know what I'm going to do. Nice job Matt on all of them, I'm hungry. My kids are pre teens now...honestly, I do miss the teething days, just a little. I like sleep more.Fish, Hunt, Cook....anything else?

Thank you @ksmyrl! What I initially wanted to do was to poke holes all throughout and get some pork fat to push in but didn't stop by the store to get any, so I just used butter and bacon grease. I do feel the butt really helped at keeping the ham moist throughout the cook. I placed the butt fat down as well.------------------------------

Thanks bro.
TMM
I cooked this probably around 275°, pulled around 160. When my thermapen went in easily I pulled. Legs up on the plate setter (standard setup).
Yeah, I think pork fat would have helped in the holes instead of butter as butter solidifies quicker, however the butt on top helped a lot.------------------------------
