    @hapster We had roughly 175 guys. There was about one 5 gallon bucket full of meat left over. They didn't know an exact number of attendees, so figured for 250 guys.

    Thanks for the comments everyone. This was a marathon cook for sure, but there was still a good bit of charcoal left. Before I left the venue I had opened the vents back up and ran it to 250* where it was still smoking and creating a great smell.

    You are welcome my friend. I hope we get to cook together some day as well. September 20 I will be cooking at Nola's brisket camp. If you are going to be there let me know and I will pull a offset over there and we will cook one. Again the hog looks excellent. I have looked at the pics several times and the skin is spot on from what I can see. A perfect transition in hue from end to end. No spiraling any where. It doesn't get much better than that.

    @DMW-most eggcellent!  Great results and what timing.  Of course, FTC would have been a site to see :)  Congrats on a home-run!   I'm sure all who were lucky enough to partake truly enjoyed it.

    I have been informed it is either Brisket Camp in Sept or Salado in March for me, not both.

    Right now, given our busy schedule in September and my desire to escape the cold weather in March, I think it will be Salado. I hope you will be in attendance in Salado.
