My latest brisket venture (pics)

So was trying to perfect my brisket recipe lately. Started out with one of these bad boys.

Someone told me to pat it dry before I rubbed it so why not give that a try too.

Rubbed, mustard

And on the egg.
275, indirect. Royal oak, peach wood and hickory.

It started snowing somewhere along this journey.
3 hours in

Almost done! 11 hours, 197 internal. Through on a chicken quarter because I can.

My wife took an action shot of me slicing it cause we knew it was money.

Pm me for my notes, this is the best brisket I've never tasted.

Great job. I haven't done a brisket in a while and that inspired me to do it soon. I'm jealous you can get a quality whole brisket at Costco for that price. Mine only has flats.Go Hogs Go

@MCN-figured something was up when that brisket jumped from what appears to be a LBGE (with snow in the background) to an XLBGE all on it's own. The rest is history
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

What convinced me that it wasn't him was the picture of the hand patting the brisket dry. The hands were too rough to belong to a nurse. lol :PJust a hack that makes some $hitty BBQ.... -
