Well im at 145 Joel IT after 5-1/2 hrs of 275 degrees. May have entered the stall. My plan it to crank up the heat to 350 as soon as IT reached 165. We will see!!

Well pulled off smoker at 175 jowl IT. Skin is very dry and tough. I haven’t cut unto the meat yet. I foiled and poured some broth in a roasting pan with it and stuck it in the oven at 180 for a while.
Fixed some Maple Bang Bang Cauliflower and some Guacamole Deviled Eggs to eat with the ribs!!Donnie Dawes - RNNL8 BBQ - Carrollton, KY

Man good for you if you can eat that. I don't like visualizing the meats that I'm eating staring back at me with their teeth exposed. I bet the cheek meat if you handed it to me on a plate would taste amazing if I didn't know where it came from. But I'm not one that can just go tear it off the pigs head myself. I guess I could maybe become desensitized to it if I was around it enough. These are the reasons I couldn't be a butcher. Great job though.

How do you serve it?

A coworker of mine went to visit family in the Philippines years ago and came back obsessed with cooking pig heads for the cheek meat. It was quite tasty, just not sure I’d be able get the wife on board to partake in this one with me though.

Smoked pig head + fresh tortillas = party
there’s good meat in the jowl and orbits, plus other tasty bits.
