I also shake the pie on the peel a couple of times while making it to keep it loose. I don’t know if any of that matters with the metal peel you are using. I launch in the WFO with wood and retreive with metal.

we are still playing with hydration, flour and speed etc and we are getting there. This peel is slick as hell so I don't think a wood peel would make a difference in that regard. We tried building on this peel once and it didn't work but that was a sticky overnight dough. We will get there!Keepin' It Weird in The ATX FBTX -

our dough sticks to our wooden peel as well but it's really sticky. We are playing with the hydration to see what works. most of these come right off and back on but the first few were over proofed and a little grabby.

Hydration plays a role for sure. I stick to a 70-75% hydration for pizza doughs. I’m lazy and don’t mess with wetter, more delicate dough.Coleman, Texas

I will say that it’s tough to have a good strategy going in - you show up on an empty stomach because you know you’ll be eating a bunch of really good pizza, but then you can get in trouble quickly drinking on an empty stomach, but it was a great reminder that I need to step outside of the city limits more often. The countryside is littered with small, great, interesting places to eat and get your drink on.

Yep, total score. CT had given me a heads up that it might be like this, and I saw something on Twitter (insert joke) that said the line at Franklin was really short. So I Uberred it over there, and when I showed up the line was really short. Then one of the employees came out and told us that where I was in the line was going to be about an hour wait. She said they had plenty of brisket left so I was a very happy dude.

@JohnInCarolina - congrats on punting the Tues AM conference session to hit the holy grail.
Similar deal for me (no conference-just brisket destination) around a year ago-rolled into Austin around noon on a Tuesday, straight for Valentina's (figure no chance at Franklin's). Thoroughly enjoy only brisket there and then headed for the hotel (strategically located around 2 blocks up the street from his place). Line was quite short, so I went down and got in line around 1:30 PM- pounding Franklin's brisket at 2:30 PM (nothing else besides Shiner Bock) and declared victory after. Meat coma ensued but back in the saddle the next day.
Congrats! As has been said, you now know the target-good luck with reverse engineering and hitting itLouisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

I was in Austin about 6 months ago for work, and I put Valentina's into my phone to see where it was in relation to the meeting to try and go afterwards. Well I screwed something up (or maybe not) and ended up at Valentina's instead of the office. Said fvck it, and sat down and had a couple of breakfast brisket tacos. They were great. I was stuffed when I go to the meeting (just a little late) where they had tacos for lunch.
