Have you tried a bit of rice flour on the peel? I think mainly getting pizzas off the peel is just an acquired skill. I make the pies on the peel as quickly as possible. I also shake the pie on the peel a couple of times while making it to keep it loose. I don’t know if any of that matters with the metal peel you are using. I launch in the WFO with wood and retreive with metal.
Looks like y’all had a fine time. I wish I could have joined you for a bit.

We would have love to have had you.

we are still playing with hydration, flour and speed etc and we are getting there. This peel is slick as hell so I don't think a wood peel would make a difference in that regard. We tried building on this peel once and it didn't work but that was a sticky overnight dough. We will get there!

I wonder if a wooden peel would be better for launching. That's all I've ever used. My pies never stick to mine and all I use is a little flour. Used to use a pinch of semolina, lately just a dusting of flour.

our dough sticks to our wooden peel as well but it's really sticky. We are playing with the hydration to see what works. most of these come right off and back on but the first few were over proofed and a little grabby.

Hydration plays a role for sure. I stick to a 70-75% hydration for pizza doughs. I’m lazy and don’t mess with wetter, more delicate dough.

Does the rest of the group have warrants? Behind on child support? No pics...
Looks like everyone’s in a pic somewhere except the dog.  John (one of the Johns) caught me bellying up to the bar while my wife juggled her drink and a few dog water containers.

Three Johns is tough to adapt to on the fly.  Houston John, Carolina John, Lakeway John.  I know I addressed Mark as John at least once or twice.

The first pics are @20stone@CPARKTX  and @The Cen-Tex Smoker

I will say that it’s tough to have a good strategy going in - you show up on an empty stomach because you know you’ll be eating a bunch of really good pizza, but then you can get in trouble quickly drinking on an empty stomach, but it was a great reminder that I need to step outside of the city limits more often.  The countryside is littered with small, great, interesting places to eat and get your drink on.

How did your presentation go while the 7 dwarves were mining in your head?
It went pretty well.  As CT said, I tapered yesterday after we got back to his place.  I knew I was going to have to drive back to the hotel so I couldn’t be all that irresponsible.

Was a great day yesterday.  CT has the best toys!

I do like the setup I have now. I don’t see any other must-haves at this time.

We we had a blast yesterday. Glad you enjoyed it.

she has given up at this point. She figures every dollar I spend on outdoor cooking is a dollar not spent on hookers and blow.

Whenever a former coworkers wife would go visit her folks, he would binge on porn and booze since he couldn’t when she was around.

Boom! That is such a score. I figured a sleety 28 degree Tuesday may be a good time to take a moon-shot. Mission Accomplished.

Almost had to call you out.  I misread your comment thinking it said "Only the hardened would wait hour for THAT garbage."  was about to say What!!!!  Should probably wear my glasses from now on while reading the forum.

Yep, total score.  CT had given me a heads up that it might be like this, and I saw something on Twitter (insert joke) that said the line at Franklin was really short.  So I Uberred it over there, and when I showed up the line was really short.  Then one of the employees came out and told us that where I was in the line was going to be about an hour wait.  She said they had plenty of brisket left so I was a very happy dude.

You got perfect weather twice this week! A perfect day Sunday so we could hang outside all day and a freakishly cold day to scare all the Riff-Raff off Franklins the day you were free for lunch!

@JohnInCarolina - congrats on punting the Tues AM conference session to hit the holy grail.
Similar deal for me (no conference-just brisket destination) around a year ago-rolled into Austin around noon on a Tuesday, straight for Valentina's (figure no chance at Franklin's).  Thoroughly enjoy only brisket there and then headed for the hotel (strategically located around 2 blocks up the street from his place).  Line was quite short, so I went down and got in line around 1:30 PM- pounding Franklin's brisket at 2:30 PM (nothing else besides Shiner Bock) and declared victory after.  Meat coma ensued but back in the saddle the next day.
Congrats!  As has been said, you now know the target-good luck with reverse engineering and hitting it ;)
Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

Haha Frank!  I was just talking to CT on the phone and he mentioned you’d had similar luck! Sometimes it’s better to be lucky than good!
