Good morning
I've been in a bit of a funk lately so what better time to bust out a fall feast! It was time for me to break out the Fall Brews and Barbecue get together at my new house. Twenty pounds of pork shoulder low in slow, 3 racks of ribs start low and slow this morning , 30 grilled chicken legs , grilled pork, venison, and beef sausage. Xl egg. A firebox full of Bge lump and cherry chunks.
Pics to come.

Good morning. Xl is chugging away at my favorite temp 240. The yard is set up. House is clean. Ribs are on at 8 30 am.

Looks great. Might want to slip some foil under the rib ends that are overhanging the plate setter. Or rotate them during the cook.They/Them

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’ Dare to think for yourself. -
Thanks for the tips. I've got homebrew pumkin pie ale and guests are to bring a six pack of their favorite fall/seasonal beer.
Made vaunted vinegar sauce and a Carolina red from smoke and spice.
Slaw and roasted potatoes for sides.
Kings Hawaiian rolls for buns.
Just threw the chicken on.

A good time was had by all. Dealt with some flare up issues during the chicken but overall I'm very pleased with the Xl. The xl is a speggtacular beast unto itself. I have much to learn.
The outdoor flex room came together nicely too

Looks like a great time was had. Great shot of the food in pans set out on the tables. I don't think I would have made it to the side dishes.They/Them
