Beef short ribs (lots of pics-sorry)

Had some short ribs from a cow I had butchered last spring. Never cooked short ribs. I went indirect few hours. Then into a pan with beef broth and tightly covered for an hour. Then outa pan and back on grill to glaze. Pretty damn good. As goid as anything ive cooked in a while.

Cooked between 280 and 300. I spent day playing in yard with my kids so I didnt babysit it. It never went over 300. I didnt test temp or time or nothin. When they pulled back from bones a lot I just put em in the pan with broth and sealed em tight and cooked another hour or so. When I took outa pan they were nearly falling apart tender. I just put em back on grid and sauced them, dropped temp to 250 and let sauce setbto a glaze. I dnt normally brag but these were the best damn thing Ive cooked in so long. They were THAT good. And I cooked a badass ribroast last nite, but this blew ghat outa the water.

Yeah especially the longer cut ones. The best part is I think I've still got like 10 packs of these things left. I had most of my cow ground since we dont eat a lot of roasts and stuff. I just had the "good" stuff cut into steaks or roasts but I did get lots of ribs. I have "ox"tails, too, that I havent tried. That may be my next experiment.500 said:Nice brontosaurus ribs! @sgh Oh you wouldnt have made it through the first few weeks. She was doing a "cleanse" and could hardly eat anything. I think she got to drink some teas for breakfast and then eat a couple sticks and a rock for lunch. I went a few days without even cooking myself any supper. Its no fun just cooking for myself.
