I used to wrap and all that too but have learned that the Car Wash Mike method works the best for me. Though I don't use a drop pan. 200-225 spritz with Apple cider/apple juice every hour. Slowly bum…1 · -

First time beef short ribs
Used hickory wood. 2 hours at 250, 1.5 hours wrapped in foil with beer, another 20 minutes back on the grid. Not bad however hard to find good short ribs at the meat market around here..2 ·
