    Awesome looking cook.

    Had to work today and am unable to post pics - the guys with full auto AR's tend to frown on photo's inside the protected area. But I made a full boneless rib roast, garlic mashed red skin potatoes, maple glazed carrots, and broccoli with cheese sauce.

    Cooked the roast in the Anova at 130 F for 24 hours, then threw it in our commercial convection oven for 5 minutes at 450 to get a nice crust on the outside.

    Everyone raved about it.

  • Merry Christmas! This is my "select" rib roast. I was concerned that it wouldn't turn out well due to lack of marbling but it's so tender and flavorful even with the inadvertent smoke ring. Hooray for reverse searing! Potatoes from my garden cooked in the drip pan.
