Salmon, rice, and asparagus.  Simple but hit the spot.

Damn, you’re eating healthy these days. Love it. Apologies if I’ve missed it, but have you cut out red meat (or just reduced consumption of all meats in general)? Your cooks are looking great.
Cut down meats a lot. My partner was a vegetarian for 10 years and has been teaching me a lot of amazing dishes and introduced me to a ton of new ingredients.

I still cook meat occasionally, but way way less than before.  Red meat used to be 4-5 times a week and it’s pretty much only when we have friends over now. For us any meat is usually fish, shellfish, or chicken.

My doctor and waistline definitely approve!!

BBQ chicken leg, brats, and beef ribs. Potatoes and onions packet being held in the oven. Gorgeous day in Indiana!

Quick breakfast from repurposed bbq ingredients. Order of food application was all wrong - still a bit slow moving and thinking from last night 🤣

Burnt ribs today.  Wind turned around on me and spiked the temps.  Sauce helped =)

I did a breakfast for a Men's Group at Church this morning.

That is an appropriate breakfast right there.  Beautiful plate.

Double-wrapped Tacos.  These were mentioned in the latest Cooks Illustrated, where refried beans are spread onto a flour tortilla, which is then wrapped around a filled, crispy taco shell, and consumed.  I know I've seen something similar on fast food menus, but not sure what they're called.
CI suggested cracking the corn shell in half and laying it flat, making it easier to fill:

I made two that way, and filled the third one from the top, intact; sixes either way.  They are filling, only needed three for a good lunch:

The Good: if the taco shell shatters, the flour tortilla and "bean glue" keep it all intact; very easy and neat to eat.

The Bad: even in the short time it took to assemble these three, the hot bean paste starts softening the taco shell, less crunch, and by the time I bit into the last taco there was no crunch whatsoever.  That was disappointing...  a nice variation, but won't be making tacos this way all the time.  TFL.

@ryantt - glad you have surfaced and in great style.  Did Chef Nora Grace participate in that cook?

@paqman - Yes.  Love the beef back ribs.  Beat their pork cousins every time.

Cheesy Taco Taters. Optional toppings would be chopped avocado or pico.

Nice tri-tip, @Paolo. Somewhat to see you source the cut where you are, given it’s only become more widely available in Canada recently.

The cut is what we call "spinacino" and is commonly available here

I would skip dinner entirely after such a sumptuous sandwich!
  • First go at these. They ate well.

PSA: Don’t vac seal two thirds of your drumstick purchase and then forget to put it in the freezer. Too much time in the danger zone, so in the trash they went. Annoyed with myself. Also, make sure you seek precision when your wife includes “Drumsticks” on the shopping list.

    True story.

On the list was “Drumsticks (on sale)”. Chicken drumsticks were also on sale. 😂 But hey, I finally got chicken lollipops squared away. I had always been curious.
