Cut down meats a lot. My partner was a vegetarian for 10 years and has been teaching me a lot of amazing dishes and introduced me to a ton of new ingredients.GrateEggspectations said:

I still cook meat occasionally, but way way less than before. Red meat used to be 4-5 times a week and it’s pretty much only when we have friends over now. For us any meat is usually fish, shellfish, or chicken.

Double-wrapped Tacos. These were mentioned in the latest Cooks Illustrated, where refried beans are spread onto a flour tortilla, which is then wrapped around a filled, crispy taco shell, and consumed. I know I've seen something similar on fast food menus, but not sure what they're called.
CI suggested cracking the corn shell in half and laying it flat, making it easier to fill:

I made two that way, and filled the third one from the top, intact; sixes either way. They are filling, only needed three for a good lunch:

The Good: if the taco shell shatters, the flour tortilla and "bean glue" keep it all intact; very easy and neat to eat.
The Bad: even in the short time it took to assemble these three, the hot bean paste starts softening the taco shell, less crunch, and by the time I bit into the last taco there was no crunch whatsoever. That was disappointing... a nice variation, but won't be making tacos this way all the time. did a pair of steaks to test newly reworked grill. Nothing special, but wow!
Next up? Just simple dogs and burgers for a group. I'll make some of my favorite Bacon Wrapped Kosher hot dogs.....Incinerate till done! -
Not fancy or impressive but they hit the spot every time.

Lunch was loaded sandwiches on wifey’s homemade bread. Too many ingredients to list. Threw on a homemade mayo/fresh Parmesan/fresh cracked black pepper sauce and a grape/hot pepper sauce. Pan fried before adding the tomato and lettuce.We’re having an early dinner tonight (hosting lots of family). Not sure I have enough runway to build up an appetite!

First go at these. They ate well.

PSA: Don’t vac seal two thirds of your drumstick purchase and then forget to put it in the freezer. Too much time in the danger zone, so in the trash they went. Annoyed with myself. Also, make sure you seek precision when your wife includes “Drumsticks” on the shopping list. -

On the list was “Drumsticks (on sale)”. Chicken drumsticks were also on sale. 😂 But hey, I finally got chicken lollipops squared away. I had always been curious. -
Bone-in gammon, don't see this back in Blighty so gave it a whirl on the holiday gasser.
Salted the skin, light dusting of mixed herbs and dried garlic.
