SIDES? Fire roasted creamy street corn…

Greetings friends..

I’ve never made street corn. We have a version at the restaurant where I work that pretty good, and a good friend made some last week when we were visiting, so I threw my spin on it. 

Mix up:
Five ears of corn charred a bit on the grill (more would’ve been better)
1/4 cup mayo and 1/4 cup sour cream
 chili powder
paprika
lime juice
chopped cilantro
Cotija cheese
s&p
garnish with cilantro, chili powder, more cheese, and a lime wedge

quick and easy - we’ll make this again!

Not pictured - a bone in pork chop and some asparagus

    Looks Amazing! Street corn is in our regular event rotation ! While off the Cobb is best , flash frozen corn works exceptionally well …. Never canned

    We saw a “Cobb-Peeler (?)” yesterday at a local fancy kitchen store. Slide the tube over the ear - get the kernels. Gonna have to try that thing..

    … probably from Amazon, the kitchen store is trés cher…
