Ace Hardware Demo cook went amazing - my partner wanted to help and she made
it soooo much easier, fun to share this with her. We picked up another gig too! 🤣
Sous Vide pork was the ticket. I split it all
up and vacuum sealed “thick steaks”. I kept the sous vide going the whole even and just pulled bags out as needed and did them burnt end style in the trager. The look on people’s faces when they had them was great. Also since I don’t have multiple fridges anymore this didn’t use up valuable fridge space chilling and storing before the event.

its pretty typical for an ir to read really low on shiny surfaces like stainless. the emissivity settings dont really work well with shiny. i do us ir therms to find hotter and cooler areas on piping, water cooling jackets on tanks/vessels etc and with the reflection and curved sections you never get a great reading. big difference between dry cast iron and the same pan with oil in it, the oil shinesfukahwee maineyou can lead a fish to water but you can not make him drink it -

Cooked some steaks late last week and noticed those were the last ones in the deep freeze. I was thrilled and panicked at the same time. Glad that I’m using the freezer stock and terrified that I was out.Went to Costco yesterday and bought a NY Strip primal at $9.99/LB. I got 16 steaks out of it so that will last us awhile.
There was a little trim that I fried up with an egg for my brunch today.

Now that we have about 9 cords of wood split and stack and under crappy tarps, my wife came out today she said she does not like piles here and there under “ratty” tarps.
