Just finished grilling a half dozen chicken thighs. They were marinated in the Turkish Marinade I posted on here in 2017. Basically a souvlaki marinade with yogurt added.

I’ve read a lot about balut over years and know that it is infamous in foodie circles. Probably no. 1 in the will-not-eat camp for most. Yours looks more appetizing than many I’ve seen. I wonder if egg maturity is a factor? A lot of tasters note the significant crunch of the bones and whatnot. The texture of yours appears smoother. Just SV magic?
I’ve tried to push the boundaries over the years and have ventured into grasshoppers and the like, but I must say that balut would be a pretty huge test. -
One of Anthony Boardain's books begins with his almost cult-like invitation and participation in trying balut for the first time.
