    I know @6baluts has been down that road and I did sample that gourmet delight many decades ago, in my sailor youth.  Perhaps alcohol infused challenges were in play. Fortunately the details escape me.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    I’ve read a lot about balut over years and know that it is infamous in foodie circles. Probably no. 1 in the will-not-eat camp for most. Yours looks more appetizing than many I’ve seen. I wonder if egg maturity is a factor? A lot of tasters note the significant crunch of the bones and whatnot. The texture of yours appears smoother. Just SV magic?

    I’ve tried to push the boundaries over the years and have ventured into grasshoppers and the like, but I must say that balut would be a pretty huge test. 


    Definitely not long down the growth stage , but probably not far …. Texture wise like a sweet bread but I’d honestly have to say , better that any egg I have had … I had salt and vinegar at the ready, needed nothing…tasted like a rich chicken soup

  • i remember soft shell crab taking a little getting used to. can definitely see where that type of bite from an egg would be jarring to many. sounds like there is a crunch free option!  this is a brave venture and glad you shared!
