11 hours for this guy, blade roast, longer than I expected for sure. Pulled at 203. The bark was fantastic. Salt and pepper. Thanks for looking.

You might have the nicest thumb knuckle of anybody I've seen holding brisket with their thumb in any picture on this forum, like from way, way, way back. I’m truly impressed. I tried to cook a blade roast on the stovetop about 20 years ago and failed miserably. I still have PTSD and haven’t tried it again.
