Indonesian Chicken Satay aka Luggage Chicken… Little Steven Memorial Cook

LS’s birthday is coming up on May 7th IIRC, so figured this was in order.

Finished this up today.Nasi Kuning (Festive Yellow Rice). Jasmine rice cooked in turmeric, lemongrass, coconut milk, kaffir/makrut lime leaves

The chix. Bone-in thighs, as I figured the bone filled in as the skewer for satay

Plated with Indonesian-style collard greens (Gulai Sayur).
Quite delicious. I made Little Steven's peanut cashew sauce as well, but drizzled it over the rice later, as the chix was a flavor bomb and held its own.
A fun cook for the weekend. Thought of LS often, as I put it all together. We shared some memories of cooking with him at Salado, and drinking late into the night with him and his bride.
There are many stories to be shared of the kind, generous, intelligent person Little Steven was, by so many here. If this is any measure of a man, I can only hope that a bit of that will be said of me some day.

If I have understood the history of this dish correctly, to do it justice, one must let it stagnate a long while in hot summer temps until its consumption is in question.

Very nice tribute cook . . . way beyond my still set and energy level.
Maybe this might not be the right time/place to ask this but I never heard
the cause of his passing. I heard it came on very quickly
