LS’s birthday is coming up on May 7th IIRC, so figured this was in order.

Toasting the spices for the marinade.

Chix in the marinade, hanging out in the luggage

Will cook tomorrow, with a couple of Indonesian sides.

Amazing, as usual. The fact that it’s a tribute to a departed friend of yours - and a friend of many on this forum - is touching.

I’d eat it. What a great way to remember a lost friend, especially since y’all met doing egg things.

  • If I have understood the history of this dish correctly, to do it justice, one must let it stagnate a long while in hot summer temps until its consumption is in question.

Very nice tribute cook . . . way beyond my still set and energy level.
Maybe this might not be the right time/place to ask this but I never heard
the cause of his passing. I heard it came on very quickly

Surprise/late diagnosis of cancer. I believe he had gone to the hospital for back pain, where the diagnosis was made. He passed within a few weeks.

The major skill required for this cook, is to be able to look SWMBO in the eye, and say "yes, I'm living that bag of chicken, in a duffle bag, out in the sun for a bit." And not flinch.

If she starts digging in the closet for a bigger duffle, I'd probably go for a walk or something.   =)
