Exceptional grill marks and finished interior colour. Looks spot on to me. I’ll have to try that mushroom sauce. Filet Mignon is about the only steak my wife will enjoy, so this will be fun on the next go ‘round.

We do ribeyes and T-bones on Saturday evenings. Going to try your filet cook next Saturday, as we both love mushrooms & onions!

All of that looks incredible, but especially those mushrooms and that sauce (and I don't like mushrooms). We are definitely going to try this recipe and I think this might change my opinion of mushrooms!

No, and the sauce was plenty thick. I just reduced with time. And I accidentally used closer to 2 cups of cream instead of 1.5Hook_emHornsfan_74 said:

I would go just as well with any steak. Thanks Scott. I'm def going to make this and it's a perfect opportunity to try some sodium citrate to see what it does....I've made butter/wine/cream sauces often and one issue I see sometimes is a grainy separation of the oil and milk solids. Not that that's a bad thing, but we were discussing the citrate recntly on another thread______________________________________________I love lamp..
