I am envious. For those who have never butchered, we take what we get at the store for granted with very little understanding of the knowledge and skill required. This would be such a great learning experience.

You run in a circle most of us would love to encounter for just a one-time lap. Great surgeon skills after knifing on humans all this time.

Regarding the cooks- Uma Thurman nailed it yesterday.
Stay healthy and safe out there on the front lines-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
I understand what you did here, but reading just the first paragraph of your post, my sick mind got this image of an empty pasture with a quarter of a cow browsing around, hopping on one leg!

Great pics. As a kid I watched my grandpa, Dad and uncles kill, bleed, gut, hang, and saw a pig in half once, but that's the closest I've got to butchering.

Thanks @saluki2007. We had originally hoped for a larger gathering and a whole cow, but COVID numbers are rising, so we cut it back to just 2 families.

It was @RyanStl. I didn't even get a pic of the smashed potatoes that we cooked on the BGE under the beef ribs (after the two lower racks had come off and were in the warmer) - but they were awesome.
